A Story Worth Rising For

This Is My Sourdough Story

Sourdough isn’t something you can rush. There’s no shortcut for it, just a starter, water, flour, and a whole lot of patience while you wait for it to come alive.

I fell in love with how honest it is. You can’t hide behind a boxed mix or a packet of yeast. It’s just you, showing up every single day to feed it, watch it, and learn what it needs.

It taught me that the best things, in baking and in life, are the ones you can’t rush. That’s become one of my favorite things to bake, and honestly, one of my favorite things to teach people about when they try it for the first time.

A Special Moment In My Business

Palm Bay High Story

The biggest event I’ve ever done was getting hired to feed the entire staff at Palm Bay High School. They brought me in to cater for all of the teachers, and it was the largest order I had taken on to date.

The teachers were raving about the food afterward, and that alone would have made it a day I’d never forget. But it meant even more than that, because Palm Bay High is where my mom and dad met and fell in love as high school sweethearts.

Getting to work that event with both of them by my side, in the same halls where their story started, was one of the most sentimental moments of my whole business so far.

And yes, my parents still drive me to work.

Behind the Boxes

The Process

A lot of people only see the finished box, tied up, labeled, and ready to go. What they don’t see is the 4 a.m. alarm, because dough doesn’t care that I’m thirteen and it definitely doesn’t care that I have school.

Being homeschooled means I get to build my own schedule, but it also means I have to be disciplined about it. Mornings start with the ovens. Then it’s schoolwork and keeping my grades up, because that comes first, no matter how good business is.

In between, I’m doing a lot of the heavy lifting, printing labels, packaging every order by hand, planning pop-up shops at local businesses, and driving out (well, getting driven out) to deliver and set up at events across Palm Bay. I’m blessed to have two parents who are business owners themselves, and they’re always right there helping me build mine. It’s a lot for one kid with a mixer, but I wouldn’t trade it.

My Story

Hi, I’m Payton Barker, the baker behind Baked By Pay.

Before I’m a baker, I’m a daughter of God, and that comes first in everything I do, my business included. No matter how busy things get, holding on to my faith is what keeps me steady.

When I’m not in the kitchen, you’ll probably find me at the piano, or on the track competing, because I love both just as much as I love baking. During the week I go to fellowship at church, and I’m up early Sunday mornings for Bible study before service. It’s a full schedule, but every bit of it brings me joy.

Being homeschooled gives me the freedom to build a life around all of it, and it’s also given me the world as my classroom. My mom and dad travel back and forth to Costa Rica, so I get to spend a lot of my time there too, learning outside of any one classroom.

None of this happens without my parents, Cameron J. Barker and Jessica Barker. They drive me to every pop-up, help me pack every order, and believe in this dream as much as I do. I’m endlessly thankful for them.
